Cowboy's Breakfast

It is another day on the _____________ ranch.  Your the cook.  What are you going to make?  You have _______# cowboys sleeping in the bunk house.  What are you going to make?  When they get up they will be hungry.  What are you going to make? 

  • 1 tbsp of vegetable oil
  • 1 cup of milk
  • 1 egg
  • 1 cup of self rising flour
  • 1 tbsp of sugar
Heat your griddle up to 350.  Mix your dry goods together first in one bowl.  (if you do your dry goods first you can use the same measuring cups).  Then mix your wet goods together.  You might want to use a separate bowl for the eggs so you can get out any egg shells before you pour the eggs into the batter.  BEWARE,  if you are making more than one batch you don't want to pour all the milk in.  Slowly pour it in after you have mixed the other ingredients till you have the right consistency, not thick, but  not so thin they will run all over the griddle.  If they do you might want to rope 'em!  If it is to thin, add more flour.  If it is to thick add more milk.  Pour them onto the griddle 1/2 a cup at a time.  Our griddle fits four at a time.  When your pancakes almost stopped  bubbling flip them over.  When you flip the pancakes it won't bubble so you have to check it ones in a while.  BEWARE, the pancake closest to the plug will cook faster than the others.  It might still be bubbling when you need to flip it.  When your pancakes are golden brown take them off the griddle.  Serve hot.
We have 9 Cow boys in our family so it takes 6 of the recipe above to feed us!

  • bacon
Preheat your oven to 375.  Place your bacon on a cookie sheet and place in preheated oven.  Let it bake till it is cooked the way you like it!

Scrambled Eggs
  • three eggs
  • salt 
  • 1/2 tbsp butter
Put your pan on the stove set it for medium-hi and add your butter.  Mix your eggs and add a little bit of salt, water, or milk.  When your butter has melted add your eggs and turn your stove down to 6 or med.  When your eggs show signs of stiffening scrape them up.  Do this every time they show signs of stiffening.  When you see a layer of brown on the bottom of the pan DO NOT SCRAPE IT UP!  Or you will have brown eggs.  When they are cooked to your satisfaction remove from heat and place them on a ceramic or glass plate.
Note: When you clean your pan you want to let it cool then soak it in hot water then the layer at the bottom will come up easily.  If there is still stuff stuck to the bottom you can use a brillo pad to get it up.  Brillo are very helpful!

There you go. A breakfast fit for a cowboy.  Now your cowboys will be ready for another day on the ranch!

You have Zucchinis coming out your ears!  You don't know what to do.  You don't want to let them go bad, but you don't have a good recipe for zucchini.  Well here are two excellent recipes you MUST try.

Zucchini Casserole
  • four medium zucchini diced
  • 4 eggs
  • 1 1/2 cups of self rising flour                                              
  • 2 tbsp of sugar
  • 3/4 Grated parmesan cheese
  • 1/2 cup of vegetable oil
  • 1 chopped onion
  • 1 cup of mozzarella
  • Ham chunks (optional)
Preheat your oven to 350.  Mix your ingredients together in a bowl.  Grease a 9x11 baking dish.  Pour in mixture.  Bake for 45 minutes or until golden brown.

Grandmas Simple Zucchini Pasta
  • 1 cup of olive oil
  • 4 sliced cloves of garlic
  • 2 medium sliced zucchinis
  • 1 lb. pasta of your choice
  • Grated parmesan cheese
Zucchini- Pour olive oil into frying pan.  Turn your heat to medium-hi.  Add zucchini to warm oil.  When your zucchini is tender add your garlic.

Noodles- Boil your water.  Add noodles to boiled water.  Cook till the noodles are tender. Strain over sink into a strainer.  Pour noodles back into the pot (for casual occasions) or put them in a decorative dish (for formal occasions).

Pour zucchini over noodles. (If you have people in your family who don't like zucchini, like us, mix your zucchini into the noodles).  Sprinkle parmesan cheese over the top.

Now you have the zucchini invasion under control!  And you found some recipes that will help you get down the healthy but not preferred zucchini.
We did find ourselves in the situation above when we planted zucchini in our garden!

Your in colonial America.  And you are entertaining guests.  You need a delicious yet filling dessert.  You run down to Seven Crossings to the home of a friend to get a recipe (She always has great recipes).  She suggest her sisters apple pie recipe.  You decide to try it.

Evangela's Extravagant Apple Pie (Ha! Ha!)

  • Ingredients for apple pie filling: 
6 cups of sliced apples (we slice about 7 apples with an apple slicer and then cut the apple slices in half to make them thinner. Another way to do it is to slice the apples with the slicer and then chop them a couple times.)
1 cup of sugar
1 tbs of SR flour
4 tbs of softened butter
2 tbs of cinnamon
2 tbs of nutmeg
  • Mix ingredients together and set aside.
  • Ingredients for apple pie crust:
2 cups of AP flour
2/3 cup of shortening or lard
1 cup of cold water

Put flour into a large bowl. Then cut in shortening until the pieces are the size of small peas. Once that is done gradually add the cold water by teaspoons (one tsp at a time) tossing the dough gently with a fork until all is moistened. Then divide the dough into two pieces. 
  • On a lightly floured surface, flatten one ball of dough with hands. Roll dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around rolling pin and unroll onto a 9 inch pie dish. Trim pastry even with rim of pie plate.   
  • Then dump your apple pie filling into the pie dish and roll out the remaining dough then put the dough over the filling and cut slits into the crust. You can either trim the remaining dough and flute the edges or as I like to do, trim the edges by pinching the dough against the pie dish and then use a fork to press a "line" design around the edges.   
  • Heat oven for 375 and cook for 40 minutes.                 

                                                  Your apple pie was a hit!  Every one asked for the recipe.

You are in need of a healthy snack for your kids.  They like things sweet (who doesn't?).  But you want it healthy.  Here is a great snack that fits both criteria.

Gabby's Great Granola Bars   

  • Ingredients: 
3/4 cups of brown sugar

2/3 cups of peanut butter
1/4 cups of butter
1/2 cups of honey
1 tsp. of vanilla extract
  •  Mix together in large bowl then add:

3 cups of oats
1/2 cup of raisins 
1/2 cup of chocolate chips
1/2 cup of coconut 
1/4 cup of sesame seeds
Add sunflower seeds and ground flax seed as needed.
  • Mix together throughly and then press onto a baking sheet and put into the oven.

  • Cook on 350 degrees for 40 minutes.             
The kids loved it, and so did you!  You plan to make a lot and store for later.
